Step 1: Soak the onion in cold water for about 30 minutes while prepping (slicing/mincing) the other ingredients.
Step 2: Peel the cucumbers and cut them into thin rounds. Place them in a medium bowl.
Step 3: Drain the onions and pat them dry. Add them to the bowl with the cucumbers.
Step 4: In a small bowl, combine the yogurt and the honey. Season well with freshly ground pepper. Scrape into the bowl with the cucumbers.
Step 5: Add the remaining ingredients except walnuts, and mix well. Cover and refrigerate until ready to serve.
Step 6: To serve, sprinkle the walnuts over the top.
