Step 1

Heat oil in a large saucepan on medium.

Add onion, pepper, and garlic

Cook until onions are tender but not brown, 5 minutes.

Add tomato sauce and bay leaves

Bring to a gentle simmer, then reduce heat to low and cook for 5 minutes.

Increase heat to high and add a packet of Goya seasoning, stock, lime juice, salt, and pepper, stirring to combine.

Add pinch of saffron

Bring to a boil, then reduce heat to low, add corn, and fluff rice with a fork.

Cover the pan and continue cooking until rice is tender and fluffy, 18 minutes.

Take off heat let sit covered 5 minutes

Remove and discard bay leaves.

Serve with lime wedges.
