Step 1

Preheat oven to 375 degrees F then set oven rack to lowest position.

Set oven rack to lowest position.

Step 3

Generously coat bottom of an 11 x 7-inch baking pan with butter (you may want to spray the sides of your pan with cooking spray for easy clean up then coat with butter, you can also bake the chicken on a rack in a baking dish if desired).

Step 4

In a bowl combine the rice cereal, dry Ranch mix, garlic powder and parmesan cheese.

Step 5

In another shallow bowl whisk the eggs.

Step 6

Firstly dip chicken in egg, then coat in the cereal mixture.

Step 7

Arrange chicken in baking dish.

Step 8

Bake for 35-40 minutes or until golden brown and cooked through.

Misa

This one is a delicious way to prepare chicken, especially for a weeknight meal. It is quick, minimal fuss, and tasty. We used the Hidden Valley spicy ranch mix, and was a hit with my husband, who appreciates a little heat in his food. I baked the chicken on a rack placed on a cookie sheet. The chicken came out so crispy. Thanks for another keeper, Kitten!
