"To get the crunch you must use dried, sliced garlic and French's Fried onions or Hanh Phi (oriental Fried red Onions or any other brand of the dry fried. Any leftovers make lovely potato patties."

Step by Step Method

Step 1

Peel the potatoes, cut into quarters boil until tender

Step 2

About 5 minutes before the potatoes are fully cooked add the dried garlic to the saucepan, continue cooking until the potatoes are done

Step 3

When the potatoes are fully cooked drain well, roughly mash them. You do not want the potatoes totally smooth

Step 4

Add butter and a drop or two of milk if they are too dry

Step 5

Just before serving stir in the fried onions

I made half a batch using 2 potatoes and halved the rest of the ingredients. I mixed the french fried onion rings in and then served it up with a marinated steak and butternut squash on the side. I love potatoes so they tasted good to me anyway, but I was disappointed that I couldn't really taste the onion rings. I would suggest adding more on the top like Bergy did in her photo. I will make them again and do that next time and hopefully they will be even better. Thanks for sharing this one with us Bergy :) Linda
