Step by Step Method

Step 1

Heat oil in large skillet over medium heat.

Step 2

Add onion, bell pepper, garlic and jalapeno, cover, and cook 5 minutes until softened.

Step 3

Add in seasonings, mix well and cook for 1 minute.

Step 4

Transfer mixture into a 3 1/2 to 4 quart slow cooker.

Step 5

Add black beans, green chiles, water, brown sugar, salt and pepper; stir well.

Step 6

Cover and cook on low for 6 to 8 hours.

Step 7

Add the cooked rice and the mangoes; cook for 10 minutes.

Step 8

Serve and enjoy!

We loved this recipe! I am a carnivore but I would be happy having just these beans, no meat, for the entire meal. As it happens I did serve the recipe with 3 very small slices of plain cooked chicken breast but they weren't really needed, Also served with side of arugula salad. This is a repeat recipe Thanks Dreamer for a good one!

Netgirl

This has become one of my semi-regular dishes, especially good for guests and potlucks. I use vegetable broth instead of oil (I freeze leftover broth in ice cube trays and use 1 or 2 instead of oil for sauteing veggies). I use a whole red bell pepper (why not?), 2 jalapenos since they're breeding them to be milder these days (look for ones with white line scarring if you want the hotter ones), double the cumin, allspice, oregano, and black pepper. I also do not use the optional mild green chiles or crushed red pepper. Thanks for posting this recipe!
