Step by Step Method
Step 1
Heat oil in a high-sided frypan or deep-fryer to 180C.
Step 2
Mix the mayonnaise, yoghurt, Tabasco and chilli with a squeeze of lemon and little salt to taste.
Step 3
Toss half the whitebait, in semolina and fry immediately for 2 to 3 minutes, until lightly golden and then drain and season with salt and pepper.
Step 4
Repeat with the remaining whitebait and serve piping hot with may and lemon wedges.
