Crispy Florentine Spaghetti

"I recently saw this in a 'Taste of Home' magazine; but, I have been making it for a few years. I think I originally found it in a 'Woman's Day' or 'Southern Living' magazine. It's super easy and really delicious. It makes a great weeknight side dish or dinner. Add marinated artichoke hearts for a vegetarian main dish; or, chicken, for something a bit heartier."

Step by Step Method

Step 1

Spaghetti ... Break the pasta into thirds; then, cook the pasta according to package directions in plenty of salty water. I like to cook it a minute shy; because it will continue cooking in the oven. Drain the spaghetti well, and return to the pot.

Step 2

Casserole Mix ... To the pot of cooked spaghetti - add the spinach, breaking it up as you add it (thawed and drained well), garlic, both cheeses, sour cream, egg, 1/2 of the onions; and, salt and pepper. At this point, you can add the artichokes or chicken if you want; but, it is optional. I like to use butter to grease the casserole dish; but, you can always use a non-stick spray too. Then, add your spaghetti mix to the dish.

Step 3

TIP: Sometimes when I add chicken to the mix, I will add a small splash of chicken broth (about 1/4 cup). I just find that it thins up the sauce a bit. Again, it isn't necessary; but, I find it works best.

Step 4

Bake ... Preheat the oven to 350; and, cook on the middle shelf, covered for 30 minutes. Uncover the casserole, add the remaining onions on top of the casserole; and, cook an additional 5 minutes until golden brown.

Step 5

Serve and ENJOY! ... As mentioned; this can be served as a side dish or main dish. As a side dish; it goes great with just about anything. But, it also makes a great main dish too.
