"We have a lot of venison sausage in our freezer and somehow I've accumulated several bags of black beans. I love creole and cajun food, so came up with this! Of course, any type of smoked sausage will work! As will canned black beans!"
In a large skillet (I use cast iron and give it a shot of non-stick spray), sauté sausage rounds until some of the fat is released into pan.
Add chopped veggies and cook until onions are translucent.
Add rest of ingredients. Bring to boil, then lower heat and simmer, covered, for another 10-15 minutes.
Serve over rice.
