Step 1: In a large skillet (I use cast iron and give it a shot of non-stick spray), sauté sausage rounds until some of the fat is released into pan.
Step 2: Add chopped veggies and cook until onions are translucent.
Step 3: Add rest of ingredients. Bring to boil, then lower heat and simmer, covered, for another 10-15 minutes.
Step 4: Serve over rice.
