Ingredients

The ingredients are:
  • 1/2 pounds smoked sausage (cut into 1/4 inch slices)
  • 1/2 pound black beans (prepared and cooked according to package directions - or use 1-15 ounce can of black beans)
  • 1/2 cup celery, chopped
  • 1 cup bell pepper, chopped (any color)
  • 1 can (14 ounce) diced tomatoes
  • 1/2 cup tomato sauce
  • 2 cloves garlic, minced
  • 1 teaspoons dried thyme (or a few sprigs of fresh thyme)
  • 1 teaspoon chicken bouillon granules
  • 1 cup water
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1 bay leaf

How to Make

  • Step 1: In a large skillet (I use cast iron and give it a shot of non-stick spray), sauté sausage rounds until some of the fat is released into pan.

  • Step 2: Add chopped veggies and cook until onions are translucent.

  • Step 3: Add rest of ingredients. Bring to boil, then lower heat and simmer, covered, for another 10-15 minutes.

  • Step 4: Serve over rice.
