Step 1
Grease a 6 cup (1.5 litre) baking dish and preheat oven to 200C.
Step 2
Place potato in a large saucepan and cover with cold water and bring to the boil over high heat and cook for 15 minutes or until tender and drain and return the potato to the pan.
Step 3
Using a potato masher, mash potatoes until smooth and then add butter, cream and nutmeg and mash to combine and then gradually stir in milk and then add parsley and stir to combine and season to taste.
Step 4
Spoon potatoes into prepared baking dish and top with cheddar and parmesan and bake for 25 to 30 minutes or until golden and serve sprinkled with extra parsley.
