Step by Step Method

Step 1

Heat large pot over medium heat. Melt butter and saute onions and celery until onions are translucent, 5 minutes. Stir in garlic and green chiles and saute 3 minutes. Pour in chicken broth, chili powder and cumin; bring to boil. Cover and reduce heat to low. Simmer soup 25 minutes and then remove from heat.

Step 2

Using an immersion blender, puree soup and return to heat. Stir in carrots and cook until softened, about 5 minutes. Stir in corn and chicken. Season with salt and pepper.

Step 3

Place flour into small bowl and slowly whisk in cream to prevent lumps. Pour into hot soup and cook stirring constantly until it thickens slightly. Taste and adjust seasonings adding more salt and pepper if needed. Serve hot with any desired toppings.

Loved this soup, deliciously spicy full flavoured and oh so good! I didn't have fire roasted chiles, went with a tin of chopped green chilies. With my low carbers in mind I didn't use the flour but added in the chicken to make for a hearty and satisfying meal! I will be making this one again - and again!

Engrossed

Great Soup! Love the chile flavor. I used 2T butter, 4oz diced Hatch New Mexico green chilies, and didn't use the flour. I served it topped with shredded cheddar/jack cheese. I really liked this, but wish I had added some diced potatoes or black beans and more chicken to make it more hearty...I think it would be a nice Southwestern chowder that way. Made for the Billboard recipe tag game.

Very tasty soup. I could not find any whole fire roasted green chiles so I used just regular canned green chilies, I increaed the chili powder to 2 teaspoons also. Definatly a soup I will make more times, thanks!

I made this soup today for lunch for me and a friend. I cut the recipe in half and still have some left over for lunch tomorrow. My friend thought it was wonderful, and I have to agree!
