Step 1

Cook pasta noodles according to package directions.

Step 2

In the meantime, spray a large skillet with a light coat of olive oil; cook the onions and garlic on medium-high until onions are translucent.

Step 3

Add the spinach, roasted red peppers and mushrooms and cook until spinach is wilted and mushrooms are moist.

Step 4

Drain pasta noodles and add to skillet along with chicken.

Step 5

Add the yogurt and parmesan cheese and heat through.

Step 6

Add salt and pepper to taste.

Just love the lightness of rice noodle! And this dish delivers just that and the lovely combinations of flavours and texture. Made for a lovely meal after a long day in the garden.
