Step 1: Cook pasta noodles according to package directions.
Step 2: In the meantime, spray a large skillet with a light coat of olive oil; cook the onions and garlic on medium-high until onions are translucent.
Step 3: Add the spinach, roasted red peppers and mushrooms and cook until spinach is wilted and mushrooms are moist.
Step 4: Drain pasta noodles and add to skillet along with chicken.
Step 5: Add the yogurt and parmesan cheese and heat through.
Step 6: Add salt and pepper to taste.
Step 7: Enjoy.
