Step by Step Method

Step 1

Place the oil, smoked sausage, onions, green pepper, and garlic into a large skillet and sauté until the onions are translucent and fragrant, approximately 5 minutes over medium-to-low heat.


Step 2

Add in the Cajun seasoning and dark chili powder and mix until the sausage, green peppers, and onions are coated.


Step 3

Stir in the chicken stock and bring to a boil. Add the orzo and stir until combined. Simmer uncovered for 12 minutes or until the orzo is tender.


Step 4

Stir in the heavy cream.


Step 5

Can be garnished with sliced green onion if desired.

Delish! Made this for the Best of 2024 game and my family really enjoyed it. We used a beef ring sausage and served it with a cornbread loaf for a great meal. Thanks for sharing this nice keeper, Mike.

Love quick and easy recipes when they taste this good. I used a spicy homemade sausage, made as directed adding a green salad for a great evening meal. I froze the extra to enjoy again. Recipe to my One Pot Meals Cookbook.

Delicious and a really easy dinner accompanied by a tossed salad. I left out the chili powder and used 1/2 teaspoon cajun seasoning. Thanks for sharing!

This was super-duper! I made a half batch and used 2 chicken sausages. I loved how everything kind of melded together and made a sauce as it simmered. This is going in my Best of Folder. PS I just realized when I looked at the title again that I didn't even put in the cream! Wow!
