The ingredients are:
  • 1 tablespoon oil
  • 14 ounces smoked sausage sliced into 1/4" slices, such as Hillshire Farms
  • 1/2 cup diced onions
  • 1 green bell pepper, medium, diced
  • 3 garlic cloves, minced
  • Cajun seasoning, to taste
  • 1/2 teaspoon chili powder
  • 3 1/2 cups chicken stock
  • 1 1/2 cups orzo, uncooked
  • 1/4 cup heavy cream

How to Make

  • Step 1: Place the oil, smoked sausage, onions, green pepper, and garlic into a large skillet and sauté until the onions are translucent and fragrant, approximately 5 minutes over medium-to-low heat.


  • Step 2: Add in the Cajun seasoning and dark chili powder and mix until the sausage, green peppers, and onions are coated.


  • Step 3: Stir in the chicken stock and bring to a boil. Add the orzo and stir until combined. Simmer uncovered for 12 minutes or until the orzo is tender.


  • Step 4: Stir in the heavy cream.


  • Step 5: Can be garnished with sliced green onion if desired.
