Step by Step Method

Step 1

Melt butter in a large saucepan over low heat.

Step 2

Stir flour, mustard, salt, and pepper into butter until mixture is smooth and bubbly.

Step 3

Remove from heat and add milk.

Step 4

Return to heat and bring to a boil, stirring constantly;

Step 5

Boil until mixture thickens, about 1 minute.

Step 6

Stir ham and eggs into milk mixture and cook until heated through.

Step 7

Spoon creamed ham and eggs onto toast.

This is delicious! We had "breakfast for dinner" night and used some ham I had in the freezer from Christmas. Easy to make and really tasty. I sprinkled a little paprika on top before serving. This would make a great buffet dish if doubled or tripled.
