Cranberry Streusel Muffins
"These muffins are delicious and moist and go very well with a morning cup of tea. I do love making muffins because they are usually healthier than many breakfasts like cereal (well to me anyways)"

Step by Step Method
Step 1
Topping: In a small bowl combine flour, sugar and cinnamon and cut in butter until crumbly and set aside.
Step 2
Muffins: In a small bowl combine the cranberries and icing sugar together and set aside
Step 3
In a large bowl cream the butter and sugar together until fluffy. Beat in the egg and vanilla.
Step 4
In another bowl combine the flour, baking powder and salt
Step 5
Add dry ingredients to creamed mixture alternately with milk. Stirring just until combined ( DO NOT OVER MIX)
Step 6
Gently stir in the cranberry mixture
Step 7
Spoon mixture into greased muffin pans or muffin liners. Sprinkle the streusel topping evenly over the muffins. Bake in preheated 375 oven for 20-25 minutes or until toothpick comes out clean.
Step 8
Let cool 5 minutes in pan and then on wire rack
