Step 1: Topping: In a small bowl combine flour, sugar and cinnamon and cut in butter until crumbly and set aside.
Step 2: Muffins: In a small bowl combine the cranberries and icing sugar together and set aside
Step 3: In a large bowl cream the butter and sugar together until fluffy. Beat in the egg and vanilla.
Step 4: In another bowl combine the flour, baking powder and salt
Step 5: Add dry ingredients to creamed mixture alternately with milk. Stirring just until combined ( DO NOT OVER MIX)
Step 6: Gently stir in the cranberry mixture
Step 7: Spoon mixture into greased muffin pans or muffin liners. Sprinkle the streusel topping evenly over the muffins. Bake in preheated 375 oven for 20-25 minutes or until toothpick comes out clean.
Step 8: Let cool 5 minutes in pan and then on wire rack
