Ingredients

The ingredients are:
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 2 tablespoons butter
  • 1/4 teaspoon cinnamon
  • 2 cups cranberries (roughly chopped)
  • 1/2 cup icing sugar
  • 1/4 cup butter (softened)
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup milk

How to Make

  • Step 1: Topping: In a small bowl combine flour, sugar and cinnamon and cut in butter until crumbly and set aside.

  • Step 2: Muffins: In a small bowl combine the cranberries and icing sugar together and set aside

  • Step 3: In a large bowl cream the butter and sugar together until fluffy. Beat in the egg and vanilla.

  • Step 4: In another bowl combine the flour, baking powder and salt

  • Step 5: Add dry ingredients to creamed mixture alternately with milk. Stirring just until combined ( DO NOT OVER MIX)

  • Step 6: Gently stir in the cranberry mixture

  • Step 7: Spoon mixture into greased muffin pans or muffin liners. Sprinkle the streusel topping evenly over the muffins. Bake in preheated 375 oven for 20-25 minutes or until toothpick comes out clean.

  • Step 8: Let cool 5 minutes in pan and then on wire rack
