Step by Step Method

Step 1

Combine all ingredients except tortilla , mix well. Divide mix and spread evenly over the 4 tortillas. Roll up tightly , wrap in plastic and refrigerate for at least one hour.

Step 2

Cut roll into 12 slices when ready to serve.

Step 3

A nice variation is to add thin slices of ham on top of the spread before rolling.

I'm choosing no stars, because I made some changes and that might have been the problem. These were VERY tasty, and everyone loved them. They were also incredibly easy to make. But I wasted more than half of them because even after rolling and refrigerating for about 12 hours, they fell completely apart when I sliced them (using my ceramic knife). I now have a large bowl of filling and strips of tortillas that we ended up chopping and eating with a spoon. Instead of store-bought cream cheese, I used my own Garlic Herb Cheese Spread. I scattered the feta, green onion and cranberries rather than mixing them into the cream cheese, since I didn't know how much of the cream cheese I would actually need. I also added some chopped pecans (about a cup). Because of those changes, and based on the posted pictures and reviews, I suspect that the pecans may have been the culprit in these falling apart on me. I'll definitely be trying them again, but following the directions exactly (although I may still add pecans, because they were amazing in the mix) to see if I can't make them work out better.

These are a wonderful treat! Definitely add the slice of ham to add contrast to the sweet cranberries. We had a thicker slice of ham so we made half with tortillas and half using the ham as the outer layer before rolling them. A coarse chop to the cranberries meant they were distributed more evenly and rolling went more smoothly. The feta is excellent, and we also tried a smoked Gruyere with good results. If you serve this to guests, they'd better come early -- or the pinwheel plate will be bare.
