Step by Step Method

Step 1

Preheat oven to 375 degrees F.

Step 2

Line a baking sheet (12x18x1 inch) baking sheet with parchment paper.

Step 3

Unroll both tubes of the dough; arrange side by side in pan (okay if some dough hangs over sides of pan). Press to seal all the seams to form 1 large piece which covers the pan bottom.

Step 4

In a medium bowl of an electric mixer beat the cream cheese, sugar, 2 1/2 tablespoons of the cornstarch and the egg yolk to blend.Mix in cottage cheese.

Step 5

In another bowl mix together the cranberry sauce and the remaining cornstarch (1 T) until the cornstarch dissolves.

Step 6

Spread the cheese filling mixture lengthwise over half of the dough, leaving 1 inch plain dough border on top, bottom and left side edges. Top cheese with the cranberry filling. Using the parchment as an aid, fold plain dough over, enclosing the filling, peel back the paper. Seal dough edges. Cut several diagonal slits in top of dough.

Step 7

Beat egg white until frothy; brush over top.

Step 8

Bake for 35 minutes or until cooked through.

Step 9

Dust with powdered sugar and cool.

Daily Inspiration

Oh wow - we loved this. I struggled a little getting the dough merged -- next time, I'll spread it out on the parchment and then transfer it to the pan. Loved the cream cheese and cranberry sauce combo. My oven cooks a little hot so it only took about 25 minutes. The powdered sugar on top is a must. YUM! This goes great with coffee.

These are a really easy Danish to make and because I love cranberries and danish, this was clearly a good option to make. The directions didn’t include the cottage cheese, but I figured it was supposed to be mixed with the cream cheese. Also, the 2 tubes of crescent rolls didn’t cover the full length of the (12x18x1 inch) bottom of the baking sheet, so I rolled it to fit, but looking at the directions, I’m not sure if it is necessary. These were enjoyable, but next time I will add more sugar to the cream cheese and maybe some lemon juice to add another level of flavor. Looking forward to tomorrow morning as I will have some with my coffee. Thank you ellie for sharing.
