Step by Step Method

Step 1

Heat the butter and oil in a saucepan with a tight fitting lid.

Step 2

Add the onion, garlic, salt and pepper.

Step 3

Cook, stirring, until onions are softened. Stir in the squash.

Step 4

Add the chicken broth and bring to a boil.

Step 5

Add the couscous and blend well. Cover, remove from heat and let stand 5 minutes.

Step 6

Add the cilantro (or parsley) and blend well with a fork.

Step 7

Serve.

My husband is not a fan of spicy food and this was a great balance to Moroccan chicken. I could not find plain, quick cooking couscous, so bought 'original' pearl couscous and adjusted the cooking liquid and time to the box directions.

I never think of couscous as a side, and I don't know why! I aways forget about it. I was looking for a way to use up some of my little squashes from the garden, and this was a great little side dish. I will make this again! Delish!
