My husband is not a fan of spicy food and this was a great balance to Moroccan chicken. I could not find plain, quick cooking couscous, so bought 'original' pearl couscous and adjusted the cooking liquid and time to the box directions.

Chef Potpie

I never think of couscous as a side, and I don't know why! I aways forget about it. I was looking for a way to use up some of my little squashes from the garden, and this was a great little side dish. I will make this again! Delish!

A very simple, quick and easy couscous, I scaled back for 2 serves and there was plenty as a side for the 3 of us. Thank you Mikekey, made for Alphabet Soup tag game.
