Step 1: Heat the butter and oil in a saucepan with a tight fitting lid.
Step 2: Add the onion, garlic, salt and pepper.
Step 3: Cook, stirring, until onions are softened. Stir in the squash.
Step 4: Add the chicken broth and bring to a boil.
Step 5: Add the couscous and blend well. Cover, remove from heat and let stand 5 minutes.
Step 6: Add the cilantro (or parsley) and blend well with a fork.
Step 7: Serve.
