Step by Step Method

Step 1

Preheat oven to 375 degrees F & grease the required number of muffin pans.

Step 2

In a large bowl, whisk together the flour, sugar, baking soda , cinnamon & salt.

Step 3

Add the carrots, raisins, pecans & coconut & stir well.

Step 4

In another bowl, whisk together the eggs, oil & vanilla extract, mixing well, then add the egg mixture to the flour mixture, stirring just until moistened.

Step 5

Spon batter into prepared muffin pans, filling each 2/3 full.

Step 6

Bake 20 to 25 minutes, or until golden, then remove from the oven & remove muffins to wire racks to cool.

Up late, and couldn't sleep so decided to make these yummy muffins and they are YUMMY! Love the crunchy outside and soft insides. I loaded mine with butter and enjoyed with my hot cocoa!

These are wonderful muffins I ommited the nuts and reduced the amounts by half and I still had a ton of muffing lol! I'm going to freeze a large amount to enjoy with my morning coffee. being a muffin connoisseur these are a definate 5-star, thanks for sharing altered!

Excellent muffins!!!! I didn't include the mini-choco-chips that I had in mind, but wowee...they would make an excellent addition. :-) Moist on the inside and a nicely crisp on the outside.

This is one of the best muffin recipes I have made. Nice and crunchy on the outside and moist inside. Great flavors and not too sweet. I cut the recipe in half and subbed dried cranberries for the raisins (we don't like them). Will be making these again!
