Step 1: Preheat oven to 375 degrees F & grease the required number of muffin pans.
Step 2: In a large bowl, whisk together the flour, sugar, baking soda , cinnamon & salt.
Step 3: Add the carrots, raisins, pecans & coconut & stir well.
Step 4: In another bowl, whisk together the eggs, oil & vanilla extract, mixing well, then add the egg mixture to the flour mixture, stirring just until moistened.
Step 5: Spon batter into prepared muffin pans, filling each 2/3 full.
Step 6: Bake 20 to 25 minutes, or until golden, then remove from the oven & remove muffins to wire racks to cool.
