Step 1

Spread 1 tablespoon cream cheese on each slice of bread, (I prefer the bread toasted, DH prefers it plain.) Slice the cucumber lengthwise into 4 slices and lay them in a single layer on one of the slices of bread; sprinkle salt and pepper to tastee.

Step 2

Add the cup of cole slaw and place the second slice of cream cheese covered bread on top. Slice into shapes you prefer and garnish with radish slices.

I used broccoli slaw and garlic herb cream cheese in this wonderful sandwich. We both thoroughly enjoyed this light meal. Served with marinated tomatoes. Another Derf keeper!
