Step by Step Method

Step 1

Heat a wok or large sauté pan over medium-low heat.

Step 2

Add the oil and immediately add the onion, ginger and garlic.

Step 3

Stir constantly and cook slowly for 3 minutes, or until onion is softened and the aromatics are fragrant; taking care not to burn them.

Step 4

Stir in soy sauce, dashi or veggie broth and lime juice.

Step 5

Place the cod in the wok and turn heat to medium.

Step 6

Cover and let the fish cook slowly, making sure the broth stays at a mere simmer.

Step 7

Cook for 8 minutes.

Step 8

Uncover and stir in the mushrooms, carrots and green onions.

Step 9

Cover again and cook for an additional 2 minutes or until cod flakes easily at the thickest part.

Step 10

Top with cilantro and serve immediately.

I knew I was going to love this soup/broth! I didn't have the shitake mushrooms but what I had worked really well - having a family that for most part belong to the 'soapy cilantro group' I used Italian parsley ... I love cilantro, snipped it into mine! This is so in my family soup keepers. Thank you Patti!!
