Step 1: Heat a wok or large sauté pan over medium-low heat.
Step 2: Add the oil and immediately add the onion, ginger and garlic.
Step 3: Stir constantly and cook slowly for 3 minutes, or until onion is softened and the aromatics are fragrant; taking care not to burn them.
Step 4: Stir in soy sauce, dashi or veggie broth and lime juice.
Step 5: Place the cod in the wok and turn heat to medium.
Step 6: Cover and let the fish cook slowly, making sure the broth stays at a mere simmer.
Step 7: Cook for 8 minutes.
Step 8: Uncover and stir in the mushrooms, carrots and green onions.
Step 9: Cover again and cook for an additional 2 minutes or until cod flakes easily at the thickest part.
Step 10: Top with cilantro and serve immediately.
