Ingredients

The ingredients are:
  • 1 teaspoon oil
  • 1/2 yellow onion, finely diced
  • 1 tablespoon grated fresh ginger
  • 4 garlic cloves, put through a press
  • 4 tablespoons low-sodium soy sauce
  • 3 cups broth (dashi or vegetable broth)
  • 1 whole lime, juiced
  • 12 ounces cod fish (1 piece, skin removed)
  • 8 shiitake mushrooms, stems removed, caps thinly sliced (or mushrooms of your choice)
  • 1 carrot, peeled and sliced into matchsticks
  • 3 green onions, finely chopped
  • 2 tablespoons cilantro, roughly chopped

How to Make

  • Step 1: Heat a wok or large sauté pan over medium-low heat.

  • Step 2: Add the oil and immediately add the onion, ginger and garlic.

  • Step 3: Stir constantly and cook slowly for 3 minutes, or until onion is softened and the aromatics are fragrant; taking care not to burn them.

  • Step 4: Stir in soy sauce, dashi or veggie broth and lime juice.

  • Step 5: Place the cod in the wok and turn heat to medium.

  • Step 6: Cover and let the fish cook slowly, making sure the broth stays at a mere simmer.

  • Step 7: Cook for 8 minutes.

  • Step 8: Uncover and stir in the mushrooms, carrots and green onions.

  • Step 9: Cover again and cook for an additional 2 minutes or until cod flakes easily at the thickest part.

  • Step 10: Top with cilantro and serve immediately.
