Heat oil and cook a strip of bacon

Cobb salad is a favorite and turning it into an omelet, not only is it a great idea, but came out optimum as an omelet. Love all the fillings, but had to substitute the blue cheese for American so that hubs would eat it, but I would have loved the blue - will have to make an extra omelet next time. The avocado in the omelet is oh so great. Thank you, Dee, for sharing!
