  • 1 cup quick cooking oats
  • 1 cup buttermilk
  • 2 large eggs
  • 1 cup packed brown sugar
  • 1/2 cups vegetable oil
  • 1 Tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger

How to Make

  • Step 1: Preheat the oven to 375° Fahrenheit.

  • Step 2: In a medium bowl, stir together the quick cooking oats and buttermilk until combined, then let soak for 10 minutes; while the oats are soaking, line 12 muffin tins with liners.

  • Step 3: Stir eggs, brown sugar, vanilla, and vegetable oil into the oatmeal mixture.

  • Step 4: Add the dry ingredients (flour, baking powder, baking soda, salt and all of the spices) into the oatmeal mixture and stir until just combined. Do not overmix.

  • Step 5: Fill the muffin tins about 3/4th of the way full, and bake for 15-20 minutes (or until a toothpick inserted into the center of the muffin comes out clean).
