Step 1

Melt butter in large saucepan; added onion, carrot, carrot and garlic; saute until onion is soft and clear.

Step 2

Add potato, stock, salt and pepper; bring to a boil; cover and simmer slowly until vegetables are cooked, stirring occasionally.

Step 3

Stir in milk and parsley; heat without boiling.

Step 4

Garnish with grated cheese.

This soup is really a meal in itself, we all enjoyed this soup very much! I increased the garlic up a clove and used chicken broth, thank you Dreamer_in_Ontario

Derf "RIP" Forever in our Kitchen

wonderful hearty soup and so tasty too. we loved it and i will be making it again through the winter. I have frozen the left overs for lunches. thanks for posting.
