Step by Step Method

Step 1

In a skillet over medium heat melt butter and saute onion, celery, and peppers until tender crisp, approximately 2 minutes. Remove skillet from heat and set aside.

Step 2

In a saucepan bring the chicken broth to a full boil and remove from heat. Quickly stir in the minute rice, onion mixture, salt if using and pepper. Cover saucepan and let rice stand for 6-7 minutes. Stir rice to fluff and serve.

The hubby and I both really enjoyed this tasty rice dish...it looks so festive this time of year...I cut the recipe in half and it worked perfect...made for "Cooking Around the Christmas Tree" tag game...

The ingredients seemed right on for the rice pilaf I've been enjoying at one of my favourite restaurants. Made using long grain rice in my rice cooker, sauting the onions, celery and peppers in the melted butter, salt and pepper adding to the rice cooker. Made for awesome tasting rice - just the taste I've been looking for. Not quite as fast as Minute rice but easy and the ingredients made for that special flavour and taste I was wanting in a rice pilaf. Thank you!
