Ingredients

The ingredients are:
  • 1/2 cup yellow onion, finely chopped
  • 3 celery ribs, finely chopped
  • 1/2 medium sweet red pepper, chopped
  • 1/2 medium green pepper, chopped
  • 1 tablespoon butter
  • 2 cups chicken broth
  • 2 cups dry instant rice
  • 1/2 teaspoon salt, optional
  • 1/4 teaspoon pepper

How to Make

  • Step 1: In a skillet over medium heat melt butter and saute onion, celery, and peppers until tender crisp, approximately 2 minutes. Remove skillet from heat and set aside.

  • Step 2: In a saucepan bring the chicken broth to a full boil and remove from heat. Quickly stir in the minute rice, onion mixture, salt if using and pepper. Cover saucepan and let rice stand for 6-7 minutes. Stir rice to fluff and serve.
