Chorizo & Carrot Pizza With Rocket Salad

Step 1

Preheat oven to 220C.

Step 2

Line a baking tray with baking paper and place the carrot on the tray and drizzle with half the oil and season and then bake for 15 to 18 minutes or until golden and tender.

Step 3

Place the pizza bases on 2 baking trays and spread them evenly with pasta sauce and top with mozzarella and sprinkle over the chorizo, goats cheese, carrot and half the onion and bake for 12 minutes or until the bases are crisp.

Step 4

Meanwhile combine the rocket, tomato, vinegar and the remaining onion and oil in a medium bowl.

Step 5

Sprinkle the pizza with parsley and cut into wedges and serve with the salad.

A really good and unique combination. I used all goat for the cheese. I very much liked the chorizo paired with the goat cheese and parsley.

A really nice combination of flavors. I placed the rocket (arugula) salad over the pizza which gave it an extra exciting layer of deliciousness. Instead of using pre-baked pizza crust, I bought whole wheat dough and baked the full measure of ingredients in the oven. I have to say that I LOVE the salad addition over this pizza! Yum. Thank you ImPat for sharing!
