Ingredients

The ingredients are:
  • 200 grams carrots (quartered lengthways, 6 baby carrots)
  • 1 1/2 tablespoons olive oil
  • 500 grams pizza crusts (2 crust, 250 grams each, base)
  • 125 ml pasta sauce (1/2 cup, spicy)
  • 75 grams mozzarella cheese (finely grated, 3/4 cup)
  • 130 grams chorizo sausage (thinly sliced, 1 sausage)
  • 70 grams goat cheese, crumbled
  • 1 red onion, thinly sliced
  • 100 grams baby rocket leaves
  • 200 grams tomatoes (Perino tomatoes, mini grape tomatoes, halved)
  • 1 tablespoon balsamic vinegar
  • 1/4 cup flat leaf parsley leaves

How to Make

  • Step 1: Preheat oven to 220C.

  • Step 2: Line a baking tray with baking paper and place the carrot on the tray and drizzle with half the oil and season and then bake for 15 to 18 minutes or until golden and tender.

  • Step 3: Place the pizza bases on 2 baking trays and spread them evenly with pasta sauce and top with mozzarella and sprinkle over the chorizo, goats cheese, carrot and half the onion and bake for 12 minutes or until the bases are crisp.

  • Step 4: Meanwhile combine the rocket, tomato, vinegar and the remaining onion and oil in a medium bowl.

  • Step 5: Sprinkle the pizza with parsley and cut into wedges and serve with the salad.
