Step by Step Method

Step 1

In a medium pot, combine sugar, cocoa powder, evaporated milk and butter.

Step 2

Cook and stir over medium-high heat until mixture comes to a boil.

Step 3

Boil for 1 minute, stirring constantly.

Step 4

Remove from heat; stir in vanilla.

Step 5

Add rolled oats and coconut and mix well.

Step 6

Drop by tablespoonfuls onto a cookie sheet lined with parchment paper.

Step 7

Refrigerate until firm, about 30 minutes to 1 hour.

Step 8

Store in an airtight container in the refrigerator or at room temperature.

Quick, easy and so scrumdiddlyumptious! It doesn't get any better than this recipe. I made these exactly as written and left them overnight in the refrigerator overnight. Not only did these make for a pretty platter for the Christmas table, but the adults loved these. I have evaporated milk left, and so will be making more of these later today!
