"Quick and easy! The unsweetened cocoa is a powerhouse in fighting free radicals, those unstable molecules in the body that can cause DNA damage. Chocoholics rejoice! Use gluten free oats if you can. Cook time is chilling time."
In a medium pot, combine sugar, cocoa powder, evaporated milk and butter.
Cook and stir over medium-high heat until mixture comes to a boil.
Boil for 1 minute, stirring constantly.
Remove from heat; stir in vanilla.
Add rolled oats and coconut and mix well.
Drop by tablespoonfuls onto a cookie sheet lined with parchment paper.
Refrigerate until firm, about 30 minutes to 1 hour.
Store in an airtight container in the refrigerator or at room temperature.
