  • 1/3 cup butter
  • 1/2 teaspoon vanilla extract

  • 1 cup sweetened shredded coconut

How to Make

  • Step 1: In a medium pot, combine sugar, cocoa powder, evaporated milk and butter.

  • Step 2: Cook and stir over medium-high heat until mixture comes to a boil.

  • Step 3: Boil for 1 minute, stirring constantly.

  • Step 4: Remove from heat; stir in vanilla.

  • Step 5: Add rolled oats and coconut and mix well.

  • Step 6: Drop by tablespoonfuls onto a cookie sheet lined with parchment paper.

  • Step 7: Refrigerate until firm, about 30 minutes to 1 hour.

  • Step 8: Store in an airtight container in the refrigerator or at room temperature.
