Step by Step Method

Step 1

Turn the oven on to 325 degrees Fahrenheit. Spray two cookie sheets with cooking spray.

Step 2

Mix the first five ingredients together in a medium bowl, then set aside.

Step 3

Mix the last four ingredients together in a large bowl.

Step 4

Then, add the wet ingredients into the large bowl a little at a time. Stir until moistened.

Step 5

Place the cookie mixture onto the cookie sheets. It should make 28 cookies.

Step 6

Bake the cookies for 15 to 20 minutes or until the edges are turning golden brown.

Step 7

Let them cool for five minutes, then put them on a rack to cool before storing them.

I'm a bit unsure about how to rate these cookies because I'm not quite sure if using gluten free flour affected the result , or if my oven just didn't do the right thing... I used a gluten free flour mix for cookies which was said to replace regular flour in cookie recipes 1:1, otherwise didn't change a thing. EXCEPT that my oven obviously was too hot, so they started to brown too quickly on the outside and I had to get them out after about 11 minutes. They do taste really yummy, but the texture is very gummy. Anyway, the taste is good, so maybe I'll fiddle around with the recipe a bit to try if I can get them less gummy. Thanks for posting, it definitely is an interesting recipe!
