"This is a wonderful flavour loaded burger. I had never tasted tomatillos raw -they are wonderful. They really added to the overall special taste of this burger. The recipe originated in a 2009 Gourmet magazine altered a bit by me. I used aged cheddar cheese use your favorite. Make 4 burgers if you wish I like to make 3 from a pound of meat. You may like to add mayo on the bun."

Step by Step Method

Step 1

Mix together the pork, chipotle, adobo sauce and garlic. Form 3 patties

Step 2

Lightly spray a skillet with oil, high heat, cook burgers for 1 minute

Step 3

Turn heat down to medium, flip burgers cover with lid, cook for 5 minutes, flip again continue cooking until done about another 6 minutes. You may want to turn the heat down a bit more

Step 4

For the last 2 minutes cooking add cheese to burgers to allow it to melt

Step 5

Assemble burgers adding the cilantro and tomatillo
