- For the tomatoes, choose ripe, red ones for the best flavor.
- For the chipotle chiles, make sure they are canned in adobo sauce for the best flavor.
- Replace the canned chipotle chiles in adobo with fresh jalapenos. The benefit of this substitution is that it will give the sauce a fresher, brighter flavor. The thinking behind this is that the fresh jalapenos will provide a more intense heat and a more vibrant flavor than the canned chiles.
- Replace the vegetable oil with olive oil. This substitution will give the sauce a richer flavor and a more subtle sweetness. The thinking behind this is that olive oil has a higher smoke point than vegetable oil, making it better suited for cooking the puree in the sauce pan.
Chipotle-Mango Sauce Combine the first 5 ingredients in a saucepan and cook over medium heat until the tomatoes begin to fall apart (about 20 minutes). Remove from heat and puree in a blender until smooth. Wipe out the saucepan and add oil. Heat over medium-high heat until the oil begins to smoke. Carefully pour the puree and bay leaves into the hot oil, then add 1 mango, peeled and diced. Bring to a boil, then reduce heat to a simmer and cook until thickened, stirring occasionally (10 minutes). Season with salt.
Chipotle-Pineapple Sauce Combine the first 5 ingredients in a saucepan and cook over medium heat until the tomatoes begin to fall apart (about 20 minutes). Remove from heat and puree in a blender until smooth. Wipe out the saucepan and add oil. Heat over medium-high heat until the oil begins to smoke. Carefully pour the puree and bay leaves into the hot oil, then add 1 cup of diced pineapple. Bring to a boil, then reduce heat to a simmer and cook until thickened, stirring occasionally (10 minutes). Season with salt.
