Ingredients

The ingredients are:
  • 2 lbs. tomatoes, fresh and halved
  • 1 cup onion, white and chopped
  • 3 cloves of garlic, thinly sliced
  • 2 chipotle chiles, canned in adobo
  • 2 cups water
  • 2 tablespoons vegetable oil
  • 3 large dried bay leaves
  • Kosher salt

How to Make

  • Step 1: Combine first 5 ingredients in sauce pan.

  • Step 2: Over medium heat and stirring occasionally cook until tomatoes begin to fall apart, about 20 minutes.

  • Step 3: Remove from heat and puree in blender until smooth set aside.

  • Step 4: Wipe out sauce pan and add oil heat over medium-high heat until oil begins to smoke.

  • Step 5: Carefully pour puree and bay leaves into hot oil, bring to boil.

  • Step 6: Reduce heat to a simmer and cook until thickened, stirring occasionally (10 minutes). Season with salt.
