Editorial Notes

The ingredient tips, suggestions, variations, facts, questions and answers below are not edits to the original author's recipe. They are not meant to imply any change would improve the recipe. • When selecting the shrimp, look for medium-sized prawns that are fresh and have been peeled and deveined.
  • For the red capsicum, choose one that is firm and bright in colour.

  • Instead of light olive oil, use avocado oil. Avocado oil has a higher smoke point than olive oil, meaning it can be heated to a higher temperature without burning.
  • Instead of frozen corn kernels, use fresh corn kernels. Fresh corn kernels provide a sweeter and more vibrant flavor than frozen corn kernels.

Vegetable Quesadillas Replace the prawns with a combination of vegetables such as mushrooms, zucchini, and capsicum, and omit the lemon juice. Cook the vegetables in the olive oil for 4-5 minutes or until softened, then proceed with the recipe.

Mexican Rice. This classic Mexican side dish is the perfect accompaniment to the Chilli Prawn Quesadillas. The combination of white rice with a variety of spices such as chili powder, cumin, garlic and onion gives it an irresistible flavor that complements the quesadillas perfectly.

: Guacamole:

This creamy, flavorful dip is the perfect accompaniment to the Chilli Prawn Quesadillas and Mexican Rice. The combination of avocados, lime juice, tomatoes and onions gives it a delicious, zesty flavor that will balance out the spiciness of the quesadillas and the richness of the rice.
