Ingredients

The ingredients are:
  • 350 grams fresh shrimp (medium prawns, peeled, deveined and chopped)
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil (light)
  • 1 cup corn kernels (frozen, thawed)
  • 1 red capsicum (finely chopped)
  • 2 green onions, finely chopped
  • 4 flour (160 grams) tortillas
  • 1/4 cup sour cream
  • 2/3 cup low-fat grated cheddar cheese
  • Cooking all spray
  • Tomato & Coriander Sauce (1 quantity of, recipe to follow)
  • Coriander sprigs, to serve (optional)
  • FOR TOMATO & CORIANDER SAUCE
  • 3/4 cup tomato salsa
  • 1 tablespoon lemon juice
  • Tabasco sauce (few drops of red Tabasco sauce)
  • 2 tablespoon chopped coriander

How to Make

  • Step 1: TOMATO & CORIANDER SAUCE - Combine salsa, juice and Tabasco in a small saucepan, cook and stir over low heat for 2 minutes or until heated and then stir in the coriander and set aside.

  • Step 2: CHILLI PRAWN QUESADILLAS - Heat a frying pan over high heat.

  • Step 3: Combine prawns, juice and oil in a bowl and then add prawn mixture to the pan and cook and stir for 2 minutes or until prawns change colour and then transfer to a heatproof bowl.

  • Step 4: Add corn and capsicum to the pan and cook and stir for 3 minutes or until browned and transfer to the prawn mixture in bowl and then add the green onion and stir to combine.

  • Step 5: Spread each tortilla with sour cream and then spoon equal amounts of prawn mixture onto one half of each tortila and sprinkle with cheese and then fold in half to form a semiccircle.

  • Step 6: Heat a large fryping pan over high heat and spray tortillas with oil and cook tortillas, in batch, for 2 minutes each side or until golden brown.

  • Step 7: Cut quesadillas into wedges and serve with Tomato & Coriander sauce and coriander sprigs, if using.
