Step 1

TOMATO & CORIANDER SAUCE - Combine salsa, juice and Tabasco in a small saucepan, cook and stir over low heat for 2 minutes or until heated and then stir in the coriander and set aside.

Step 2

CHILLI PRAWN QUESADILLAS - Heat a frying pan over high heat.

Step 3

Combine prawns, juice and oil in a bowl and then add prawn mixture to the pan and cook and stir for 2 minutes or until prawns change colour and then transfer to a heatproof bowl.

Step 4

Add corn and capsicum to the pan and cook and stir for 3 minutes or until browned and transfer to the prawn mixture in bowl and then add the green onion and stir to combine.

Step 5

Spread each tortilla with sour cream and then spoon equal amounts of prawn mixture onto one half of each tortila and sprinkle with cheese and then fold in half to form a semiccircle.

Step 6

Heat a large fryping pan over high heat and spray tortillas with oil and cook tortillas, in batch, for 2 minutes each side or until golden brown.

Step 7

Cut quesadillas into wedges and serve with Tomato & Coriander sauce and coriander sprigs, if using.
