Step by Step Method

Step 1

Bring a medium pot of salted water to a boil. (Set a bowl of ice water next to the sink.)

Step 2

Add trimmed sugar snap peas to the pot and cook until just tender, 2-3 minutes. Drain and transfer to the ice water to stop cooking process. Drain and pat dry.

Step 3

In a skillet over medium heat, combine olive oil, butter, chili pepper (or red pepper flakes), lime zest, lime juice and sugar snap peas. Increase heat and heat through, about 1 minute.

Step 4

Remove from heat and transfer to a serving bowl or platter. Top with chopped peanuts and cilantro. Serve immediately!

Nice side dish, and fast to make too. I used less salt. Loved the addition of the peanuts and cilantro.

10 stars for this. So fresh and tasty. I thought I had a jar of peanuts but someone had finished them off, so I didn't have them to sprinkle, but fine without them, and gives me an excuse to buy more peanuts and make this again. Thanks for this keeper.
