The ingredients are:
  • Water
  • 1/2 teaspoon salt
  • 1 pound sugar snap peas (trimmed and stringed)
  • 1 red chili pepper (such as Fresno or jalapeno, thinly sliced, or substitute 2 pinches red pepper flakes)
  • 1 teaspoon olive oil
  • 1 tablespoon butter (at room temperature)
  • 1/2 teaspoon finely grated lime zest
  • 1 tablespoon lime juice
  • 1/4 cup peanuts (roasted, chopped)
  • 1/4 cup fresh cilantro leaves (snipped)

How to Make

  • Step 1: Bring a medium pot of salted water to a boil. (Set a bowl of ice water next to the sink.)

  • Step 2: Add trimmed sugar snap peas to the pot and cook until just tender, 2-3 minutes. Drain and transfer to the ice water to stop cooking process. Drain and pat dry.

  • Step 3: In a skillet over medium heat, combine olive oil, butter, chili pepper (or red pepper flakes), lime zest, lime juice and sugar snap peas. Increase heat and heat through, about 1 minute.

  • Step 4: Remove from heat and transfer to a serving bowl or platter. Top with chopped peanuts and cilantro. Serve immediately!
