Step 1: Bring a medium pot of salted water to a boil. (Set a bowl of ice water next to the sink.)
Step 2: Add trimmed sugar snap peas to the pot and cook until just tender, 2-3 minutes. Drain and transfer to the ice water to stop cooking process. Drain and pat dry.
Step 3: In a skillet over medium heat, combine olive oil, butter, chili pepper (or red pepper flakes), lime zest, lime juice and sugar snap peas. Increase heat and heat through, about 1 minute.
Step 4: Remove from heat and transfer to a serving bowl or platter. Top with chopped peanuts and cilantro. Serve immediately!
